A quick and easy healthy snack on the go!
Craving a healthy snack that isn't carrot sticks? Whip up a batch of these super simple energy bites. You can vary the ingredients and easily use a food processor to pulse everything together into a smooth paste.
Now, when I say healthy, you still have to consider the fact that these contain oil and a concentrated amount of dried fruit. Even though it's not processed sugar, dried fruit still contains a high amount of sugar, so just like everything in life, make sure to eat in moderation. One or two energy bites should be all your need to satisfy that mid-morning hunger or afternoon pick-me-up. You can also make a double batch and keep them in the freezer for longer storage. And don't be afraid to have fun trying out different ingredients and mix-ins. These are eaten raw so as long as you have the right consistency, experiment with ingredients that don't need to be bakes!

coconut flakes
cocoa powder (a little bit goes a long way)
alternative sweeteners
almond butter instead of peanut
various seeds and nuts
Oatmeal peanut butter energy bites
Yields about 20-24 bites
Ingredients
6-7 large Medjool dates, pitted (about 1/2 cup packed, pitted dates)
2 1/2 tbsp water
2 tbsp maple syrup or honey
1 tsp vanilla extract
3/4 cup natural peanut butter
1/2 cup large rolled oats
2 tbsp chia seeds
Optional: small handful of chocolate chips or chopped dark chocolate
Procedure
Mix everything one at a time in a food processor until a nice smooth consistency. Squeeze some between your fingers and see if it forms a ball that sticks together. If not, add a bit more water, peanut butter or maple syrup to your taste.
Form 1-inch balls with your hands and make sure to squish enough so they don't fall apart. It will be a bit oily if using natural peanut butter.
They are ready to eat as is! Store in an airtight container for up to 4 days at room temperature. You can also place them on a baking tray and allow to freeze through and then store them in an airtight container or freezer bag up to 2 months. Just let them stand at room temperature for about 5-10 minutes.
